President's Message 

Tom Thatcher thanked the Chapter for allowing him to speak at our January meeting and mentioned that he had conducted business related to his position at the NJDOT with three separate persons at our meeting. I was also able to conduct some official business at the meeting. So while the Chapter gains when you participate, there are also opportunities for you to gain as well. That is what an organization like ours is all about. Together we can accomplish much more than any of us could indivdually.

As time permits, I have been contacting our members todividually to learn more about how we can improve our Chapter. I look forward to an opportuinty to speak with you. Perhaps you cna jot a few ideas down that we can discuss.

Finally, I am certain that the Spring Forum will prove to be a rousing success. With the help of our membership and officers I know eveyone will value the time they spend at the Forum. Sincerely, Dave Kook,

. Recipe
 Chicken and Rice Burritos Source: Better Homes and Gardens Makes 6 to 8 servings  
Prep: 25 minutes
Cook: 6 to 7 hours plus 5 minutes

1  medium zucchini ** 1  large green sweet pepper, cubed ** 1  medium onion,
coarsely chopped ** 1/2  cup coarsely chopped celery ** 11/2  pounds skinless,
boneless chicken breast, cut into 1/2-inch strips ** 1  8-ounce bottle green taco sauce
** 1  teaspoon instant chicken bouillon granules ** 1/2  teaspoon ground cumin
** 1  cup instant rice ** 6  to 8 nine to ten-inch dsspinach, chili, or plain flour tortillas,
** 3/4  cup shredded Monterey Jack cheese with jalapeno peppers (3 ounces)
** 2  small  tomatoes, chopped ** 2   green onions, sliced

Cut zucchini in half lengthwise and then into 3/4-inch slices. In a 31/2- or 4-
quart crockery cooker combine zucchini, green pepper, onion, and celery.
Top with chicken strips. In a small bowl combine taco sauce, bouillon granules,
and cumin. Pour over chicken. Cover and cook on low-heat setting
for 6 to 7 hours or on high setting for 3 to 3 1/2 hours. Stir in rice. Cover and
let stand for 5 minutes. Divide chicken mixture among pre warmed tortillas.
Top with shredded cheese, tomato, and green onion. Fold bottom edge of
each tortilla up and over filling. Fold opposite sides in, just until they meet.
Roll up from bottom. Secure with wooden toothpicks, if necessary.

Recent Chapter Meetings For our January 2005 meeting we began with a visit to
South Jersey Airport, recently acquired by NJDOT. Thirteen members were able to
come out early and visit the Air Victory Museum which is located on the grounds of
the airport. After a very interesting presentation and a few laughs as our braver
members climbed into rather tight spaces in the museum's vintage airccraft, we moved
to Braddock's Tavern.
There were a number of positive comments about the food, although with only one wiat
person they were a tad bit slow. Oor meeting brought in 27 persons, making it one
of our better attended meetings. Our speaker was Tom Thatcher, Director of NJDOT
Division of Aeronautics. Tom discussed the Airport Safety Zone from the early failures
of zoning to keep airplanes and surrounding uses apart to the implementation of the
Airport Safety Zone and its uses today. There was a very lively question and anser
period and Tom's background as a pilot, and sense of humor led to a very enjoyable meeting

Safety Tip Courtesy of NJDOT
Stretch before, during and after physical activity-- like shoveling. Cold muscles are
more likely to strain. When shoveling snow: Choose a shovel that's right for you, one
with a handle length that lets you slightly bend your knees, flex your back 10 degrees
or less, and hold the shovel comfortably in your hands at the start of the shovel
stroke; a smaller blade is better than a larger one--helps avoid the risk of picking
up a pile of snow that is too heavy. When you grip the shovel, make sure your hands
are at least 12 inches apart--increasing your leverage and reducing strain on your
body Squat with your legs apart, knees bent and back straight, lifting with your legs.
Do not bend at the waist. Scoop small amounts of snow into the shovel and walk to
where you want to dump it. Holding a shovel of snow with your arms outstretched
puts too much weight on your spine; Step in the direction in which you are throwing
the snow-- preventing the low back from twisting and "next-day back fatigue".
Tackle heavy snow in two stages skimming off the snowfrom the top and then remove
the bottom layer. Avoid overloading the shovel. You are working too hard if you
cannot say a long sentencein one breath. If so, take a short rest or decrease the intensity
of effort slightly. Take frequent breaks. Stand up straightand walk around periodically
to extend the low back. Do standing extension exercises by placing your hands on the
back of your hips and bend backwards slightly for several seconds. Make sure
that your lower back is well covered. If your spine is exposed to the cold,your muscles
can seize up resulting in back pain, muscle spasms and a .lack of coordination. If you
have a health problem or are not in good shape, do not even consider snowshoveling.
Find someone ahead of time to help.
